Carrot and ginger energy balls (Nut Free!)

Quantity: Makes approx. 18 balls.

The perfect snack on the go, for kids lunchboxes and to lift your energy during that mid-afternoon slump

 

Ingredients:

·      1 large carrot, grated

·      100g chopped dates

·      120ml water

·      1.5 cups oats (rolled or jumbo)

·      ½ inch fresh ginger, grated

·      1 tbsp chia seeds

  

Method:

1.     Place dates and water in a pan and heat over a medium heat, stirring regularly, until the dates have softened and made a paste

2.     Add the carrot, ginger, chia seeds and 1 cup of the oats

3.     Place in a food processor and mix until forms a dough

4.     Tip into a mixing bowl and add the rest of the oats

5.     Lightly wet hands with cold water and then take approx. 1 heaped teaspoon of dough and roll it between your hands to form a ball

6.     Roll the balls in desiccated coconut

7.     Will store in an air tight container for up to 5 days or freeze for 1 month
