Pimped-Up Porridge

Trust me on this one!…This actually tastes good!

You can play around with your own combinations.

This one includes:

Ingredients:

  • 1/2 cup porridge oats - I like the big rolled oats (they take a little more cooking, but I prefer the texture)

  • 1/3 carrot, grated

  • 1/3 courgette, grated

  • 2 tsp. desiccated coconut

  • 1/2 tablespoon raisins

  • 1/2 tsp. cinnamon

  • 1.5 cups milk of your choice - cow’s milk or plant milk (make sure it’s fortified with calcium!)

Method:

  1. Combine everything in a non-stick pan, bring to a bubble and then reduce heat and stir regularly until thickened.

  2. If you need more liquid I always used a dash of hot water out of the kettle OR to cool it down for littlies I cook until thick and then add a dash of cold milk at the end to loosen it and cool it at the same time.
