Homemade granola
This granola is super adaptable so you can put whatever nuts or dried fruit you like in it. As a rule add the nuts at the beginning and the dried fruits for the last 10 minutes of cooking. Quantities can be doubled.
Ingredients:
· 2 tbsp vegetable oil
· 2 tbsp honey or maple syrup
· 1 tsp vanilla extract
· 300g rolled oats
· 50g sunflower seed
· 4 tbsp sesame seeds
· 50g pumpkin seeds
· 100g flaked almond
· 100g dried fruit of your choice (e.g. raisins, dates, cranberries, organic apricots)
· 50g desiccated coconut
Method:
1. Heat oven to 160C fan. Mix the oil, maple syrup or honey and vanilla in a large bowl. Tip in all the remaining ingredients, except the dried fruit and coconut, and mix well.
2. Tip the granola onto two baking sheets and spread evenly. Bake for 15 mins, then mix in the coconut and dried fruit, and bake for 10-15 mins more. You can bake for longer in the first half if you prefer a more toasted flavour.
3. Remove and allow to cool completely.
4. Store in an airtight container (will keep for up to 2 weeks).
