Date and cashew energy balls

 

Ingredients:

·      70g cashews

·      100g pitted dates

·      50g porridge oats

·      50ml of water

·      4 tbsp desiccated coconut or cacao powder

 

Method:

1.     In a food processor, blitz the cashews and dates for 1 minute, until the mixture becomes like breadcrumbs.

2.     Tip mixture into pan and add 50ml water heat until mixture becomes sticky and dates form a paste

3.     Add oats and mix until thoroughly combined

4.     Using your hands (dampen to help) roll the mixture into 15 bite-size balls.  Roll them in desiccated coconut or cacao powder and serve.

 

For a twist: add orange zest or 1 tbsp of cacao powder into the mix. You can also use ground almonds instead of the cashews for a smoother texture.
