Banana pancakes

These pancakes are super quick to whip up and contain no added sugar. Even my daughter who doesn’t like bananas will happily eat these!

Makes 6 pancakes

Ingredients:

1 egg, whisked

1 ripe banana (the riper the better), mashed with a fork

25g oats

Method:

  1. Mix the above together thoroughly.

  2. Heat a small amount of oil or butter in a non-stick pan and cook on a medium heat for 3minutes on each side (they blacken more easily than regular pancakes, so keep an eye).

They are quite moist and naturally sweet, so don’t need anything with them, but would go well with another type of fruit, plain yoghurt or a drizzle of maple syrup.
