Oat crackers

There is a video of me making these with my kids here, but I’ve typed the recipe out for you.

Ingredients:

  • 60g porridge oats

  • 70g plain flour

  • pinch salt

  • 1 tsp nutritional yeast flakes

  • 1.5 tablespoons olive oil

  • 1/2 tsp honey (leave out for babies under 1 yr)

  • 60 - 120 ml water (Don't make mixture too wet!)

  • optional ~ 1 tsp rosemary, fennel OR other herbs OR 1 tablespoon of seeds (add to your taste)

Bake at 200 degrees C (fan) for about 15 mins (check on them regularly and check for crispness)

Method:

  1. Preheat oven to 180C (fan)

  2. Blitz oats in food processor until powdery

  3. Tip into bowl and add the flour, the salt, yeast flakes and herbs or seeds, plus olive oil and the honey.

  4. Add water a little at a time and stir with metal spoon until forms a dough

  5. Roll out between two sheets of baking parchment until about 3mm thick

  6. Remove top sheet and place on baking tray

  7. Score with a knife into the size you would prefer (almost all the way through)

  8. Bake for until golden and crisp (about 15 mins)

  9. Once cooled slightly, break into pieces and place on cooling rack to cool completely before storing in air tight container. Will keep for up to 5 days.
